Hey,
First, you bought a great camera!
Since you don’t know a lot about DSLRs, I recommend you to read a bit.
How to change those settings? Set to ‘Manual mode’. Here is a good post explaining all the modes on your T1i – http://the-digital-photographer.blogspot.com/2009/ǫ/camera-modes.html
Here are shutter speed, aperture, iso, focal length and all other tutorials – http://the-digital-photographer.blogspot.com/2009/11/tutorials.html
These posts are meant for beginners and they have examples. If you want to know how to shoot different things like light graffiti, water drops etc., look here – http://the-digital-photographer.blogspot.com/2009/11/photography-tips.html
Good luck!

Exposure: this refers to all your individual settings working together.
Aperture: set it to “Av” or “Aperture Priority Mode” on the top (with the green box, Av, Tv, M, P, and other little pictures) and then swing your dial to change the numbers. this is changing your f-stop value aka aperture.
Focal Length: Applies to each particular lens you have on your camera. if you have a kit lens that is 18-55mm and you have it zoomed in, let’s say – half way, your Focal Length is probably around 35mm.
ISO Speed: There are some shooting modes where it needs to remain on auto, but in the Av, Tv, M, settings you can set your iso manually. use the little iso button near your shutter button and select from there.
exposure bias: hold your “Av+/-” button on the back near your screen and then use your dial on the top to shift it left or right. Left will make your image darker than a medium exposure would be, and to the right will make everything brighter than amedium exposure.
Flash: to set the exposure bias for your flash, go into the menu and find FEB (flash exposure balancing) in most cases, except for dark of night photos, set it 2 notches to the left. otherwise your flash will always be very prominent in photos. Flash is like salt, add it to taste, a little can go a long way but too much is too much, and its hard to take remove it once its there.
